I completed a stitch and glue Sabotini this past summer and I'm extremely happy with how it performs. I made full sized templates that I am willing to give away to anyone that wants to pick them up at my shop in St. Paul, MN. This should save you about a days worth of work. I don't want to rip off Glen-L so you'll have to prove you also bought the plans.
It doesn't effect the templates but I modified my dinghy so I can tow it behind a bicycle. Works better than I imagined.

I probably wasn't clear by what I meant by templates. I transferred the full sized patterns that came from Glen-L onto 1/2 MDF and cut to shape. This makes it easy to lay out the parts on the ply with minimal waste. I did a rough cut of the ply and than using double carpet tape affixed the MDF templates to the ply and used a flush trim router bit to make an exact copy.
